A collaboration between lifelong friends, Ibiza born and bred Yolanda Torres and Victor Guasch of Atzaró, who share a passion for healthy-eating, laidback dining experiences, it is so much more than ‘just’ a restaurant. Aubergine Ibiza is an experience.

This huge yet inviting eatery is situated in a charming finca on the road from Santa Gertrudis to San Miguel, surrounded by vegetable gardens, plants, trees and beautiful blue Ibiza sky. The stylishly decorated space features the healthy, organic restaurant, a local shop featuring food goods, handmade leather items, bags and art, plus a separate all-new World Family Ibiza boutique, plus an exhibition space and kids play area, plus pets are always welcomed.

Aubergine Ibiza’s farm-to-table, day-to-night gourmet concept is showcased by an ever-changing, accessibly priced blackboard menu with deluxe salads (much of the produce is plucked directly from the onsite veggie patch) such as caramelised pumpkin and feta or quinoa with mango and avocado, or black free-range chicken from Ibiza and organic beef carpaccio for meat lovers. Organic wines are showcased on a well-thought-out wine list, and water is purified onsite via a hi-tech osmosis system.

Open all year round, Aubergine Ibiza also features a cosy interior space for cooler nights, winter days and private celebrations. The green-themed decor is rustic yet super chic, and in keeping with their no-waste ethos features furniture up-cycled from Atzaró.
